不同产地丰花玫瑰花水香气成分分析

摘要: 通过对福建省不同产地丰花玫瑰花水香气成分进行比较,探究环境气候条件对丰花玫瑰香气品质的影响,为玫瑰花栽培条件的选择以及提升鲜花品质提供理论依据。采用顶空-气质联用法检测水蒸气蒸馏提取的丰花玫瑰花水中的香气成分,对各成分质谱通过计算机谱库(NIST/WILEY)检索和资料分析,然后结合文献进行人工谱图解析,对福建省不同产地的丰花玫瑰花水主要香气成分进行定性和定量分析。结果表明:从福州市晋安区、屏南县、清流县、泰宁县、漳州市龙文区、柘荣县等产地丰花玫瑰花水中分别鉴定出香气成分48、56、69、44、55、47种,香气成分总相对含量分别为99.88%、99.85%、99.81%、99.82%、99.83%、99.89%。丰花玫瑰花水中主要含萜烯类、酯类、醇类、醛类、酮类、胺类、醚类、芳香族类等成分,其中相对含量较高的香气成分有硼烷二甲硫醚络合物、2-氮杂环丙烷乙基胺、庚醛、芳樟醇、(2S-顺)-四氢化-4-甲基-2-(2-甲基-1-丙烯基)-2H-吡喃、香茅醇、橙花醇、乙酸玫瑰酯、甲基丁香酚等。特征性香气成分香茅醇、橙花醇、玫瑰醚在不同产地丰花玫瑰花水中差异较大,其中福州市晋安区产地玫瑰花水的特征性香气成分相对含量较高,相对含量分别为61.31%、15.48%和1.36%。综上分析表明不同产地对丰花玫瑰花水中的香气成分有一定影响,以福州市晋安区产地丰花玫瑰花水的头香充足,香气层次丰富,香气品质最佳,具有多种抗菌、抗癌、抗炎、抗抑郁生理活性。

Abstract: Through the comparison of aroma components in the water of Fenghua rose from different producing areas in Fujian Province, the influence of environmental and climatic conditions on the aroma quality of Fenghua rose was explored, thus to provide theoretical basis for the selection of cultivation conditions of rose and the improvement of flower quality. The aroma components in the water of Fenghua rose extracted by steam distillation were detected by using the static headspace-gas chromatography-mass spectrometry method. The mass spectra of each component were searched and analyzed by computer spectral library (NIST/WILEY), and the artificial spectrogram was analyzed by combining with the literatures. Then, the main aroma components in the water of Fenghua rose from different producing areas in Fujian Province were analyzed qualitatively and quantitatively. The results showed that 48, 56, 69, 44, 55, 47 aroma components were respectively identified from the water of Fenghua roses in Jin'an District of Fuzhou, Pingnan County, Qingliu County, Taining County, Longwen District of Zhangzhou and Zherong County, and the total relative contents of aroma components were respectively 99.88%, 99.85%, 99.81%, 99.82%, 99.83% and 99.89%. The water of Fenghua rose mainly contained the components such as terpenes, esters, alcohols, aldehydes, ketones, amines, ethers, aromatic species, etc., among which the aroma components with high relative content were borane dimethyl sulfide complex compound, 2-aziridine ethylamine, heptanal, linalool, (2S-cis)-tetrahydro-4-methyl-2-(2-methyl-1-allyl) -2H-pyran, citronellol, nerol, rhodinyl acetate, methyleugenol, etc. The characteristic aroma components such as citronellol, nerol and rose oxide varied greatly in the water of Fenghua rose from different producing areas in Fujian, among which the relative contents of the characteristic aroma components in the water of Fenghua rose from Jin'an District of Fuzhou were higher, being 61.31%, 15.48% and 1.36%, respectively. In conclusion, the analysis showed that different producing areas had certain influence on the aroma components in the water of Fenghua rose. The water of Fenghua rose from Jin'an District of Fuzhou had abundant top fragrance, rich fragrance levels and the best aroma quality, which had a variety of antibacterial, anticancer, anti-inflammatory and anti-depression physiological activities.
