稀少、昂贵的季节馈赠,为上海8½ Otto e Mezzo BOMBANA餐厅的餐桌,酝酿珍贵风味。迈入一年的尾声,就到了白松露盛产的时刻,白松露的新鲜芬芳四溢于餐桌,唤醒食欲的悸动。

As the year draws to a close, the precious seasonal gift of white truffles graces the tables at Shanghai's 8½ Otto e Mezzo BOMBANA restaurant, enriching the dining experience with exquisite flavors and arousing appetites with their fresh aroma.

意大利国宝级厨师Umberto Bombana先生出生在意大利北部的贝加莫,2002年,Bombana先生荣获意大利外国人烹饪学院颁发的「亚洲最佳意大利厨师」称号, 2006年被意大利Piedmontese Regional Enoteca Cavour委任为「国际白松露大使」,被世人称为「白松露之王」

Renowned Italian chef Umberto Bombana hails from Bergamo in northern Italy, where he developed an interest in food at a young age. In 2002, he was awarded the title of “Asia’s Best Italian Chef” by the Italian Culinary Institute for Foreigners, and in 2006, he was appointed “International White Truffle Ambassador” by the Piedmontese Regional Enoteca Cavour. Today, he is known around the world as the “King of White Truffles”.

今年12月15日至16日,Umberto Bombana先生、北京Opera BOMBANA行政主厨Andrea Susto将一同来到上海8½ Otto e Mezzo BOMBANA餐厅,与行政主厨Gabriele Delgrossi一同打造这张限定且特别的白松露菜单。

On December 15th and 16th this year, Chef Umberto Bombana and Opera BOMBANA Beijing's Executive Chef Andrea Susto will team up with Executive Chef Gabriele Delgrossi at 8½ Otto e Mezzo BOMBANA Shanghai to craft an exclusive and special white truffle menu.

有着“白松露之王”之称的Umberto Bombana先生,松露是他最引以为傲的食材,每年秋冬季节,他都会选取当季最为新鲜的白松露与食客们分享。这一次的菜单,呈现的是BOMBANA家族师徒之间的技艺切磋,也是一脉相承高级料理的风味探索。

Mr. Umberto Bombana, known as the 'King of White Truffles,' takes immense pride in this prized ingredient. Every autumn and winter, he personally selects the freshest white truffles to delight his customers. This menu reflects a culinary exchange among mentors and apprentices within the BOMBANA family, showcasing their ongoing pursuit of exceptional cuisine.

The homemade Italian pasta with white truffles is a heavenly match, a classic combination on the dining table, releasing its intense aroma repeatedly on the plate.

油封调味有机鸡蛋黄配白松露的喜出望外,清香、柔嫩,细滑中夹杂着质感;当松露与甜品一起共舞,巧克力榛子熔岩蛋糕配白松露的别具一格……丰富的口感带来的层层惊喜暗含其中,将白松露的狂野、温柔、魅惑的每一面完美展现。

The delight of marinated egg yolk confit mixed with white truffles is fragrant, tender, and subtly textured.
