嘉宝果生物活性物质及加工研究进展

摘要: 嘉宝果的种质资源丰富,果实富含的花青素和酚类具有较强的抗氧化、预防糖尿病和肥胖等慢性疾病等功能,其深加工产品多样化。综述了嘉宝果种质资源、生物活性物质及贮藏加工的研究进展,对今后嘉宝果的生产和科研发展提出建议。

Abstract: The germplasm of jaboticaba are rich. Its fruits contain rich amount of anthocyanin and phenolic compound which have some functions, including high anti-oxidation, and prevention of chronic diseases, such as, diabetes and hyperlipidemia. There are diversified products after deep-processing. This paper reviewed research progress in, bioactive substance and its storage and processing of Jaboticaba, some suggestions were also proposed for further production and science research development of jaboticaba.
